Directions
- Preheat oven to 375°F.

Ricotta Cheese Cookie Recipe
Ingredients
- 2 cups sugar
- 2 sticks butter, softened
- 15 oz ricotta cheese
- 2 tsp vanilla extract
- 2 large eggs
- 4 cups flour
- 2 Tbsp baking powder
- 1 tsp salt
- 1½ cups powdered sugar
- 3 Tbsp milk
- lemon juice (to taste)

Directions
- Preheat oven to 350°F.
- Beat sugar and butter in a large bowl with an electric mixer on low speed. Increase speed to high, then beat until light and fluffy, about 5 minutes.
- Reduce speed to medium and mix in ricotta, vanilla extract, and eggs until well combined.
- Reduce speed to low and add flour, baking powder, and salt. Mix until dough forms.
- Drop small portions of the dough onto a large ungreased cookie sheet.
- Bake for about 15 minutes or until cookies are lightly golden.
- Remove cookies and cool on a wire rack.
- While the cookies cool, make the glaze by mixing powdered sugar, milk, and lemon juice in a small bowl until smooth.

- ½ cup pretzels, chopped

Directions
- Preheat oven to 350°F.
- In a medium bowl, whisk flour, baking soda, and kosher salt. Set aside.
- Using a hand mixer or stand mixer fitted with paddle, beat butter and both sugars until light and fluffy.
- Add egg and vanilla extract and mix on low, scraping down the bowl as needed.
- Add dry ingredients to mixer and mix on low until combined.
- Stir in chocolate chips, toffee bits, potato chips, and pretzels.
- Roll cookie dough into golf ball-sized balls. Place cookie dough balls on a parchment paper-lined baking sheets, leaving about 6 inches between them.
- Bake cookies until edges are crisp and centers are still soft, about 10-12 minutes.
- When you remove the cookies from the oven, firmly tap the baking sheet on the counter to deflate them. Sprinkle the cookies lightly with flaky sea salt.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
